I did not try to change the root system this way but I changed a few
big partitions, all went quick and smooth. I don't think there will be
trouble.

Depends on the speed of the hdd. tune2fs part is very fast, time
consuming part is the fsck part. Depending on the speed of the disk
overall operation will probably take 10 mins or so.

yeap, just prepare a livecd, change fstab, reboot and boot into livecd,
do tune2fs stuff and fsck, reboot
